Easy 10-Minute DIESEL Keto Vanilla Ice Cream
The fast and easy way to delicious keto vanilla ice cream. Made with DIESEL New Zealand Whey Isolate, this is an AMAZING treat that you will absolutely LOVE!
Equipment
- Electric Hand Mixer
Ingredients
- 1.5 scoops DIESEL French Vanilla
- 1 tsp vanilla extract
- 1.5 cups whipping cream
- 2 tbsp coconut whipped cream
- 1 whole egg
- 2.5 tbsp erythritol
- 2 drops peppermint essential oil
- 1 square 100% dark chocolate
- 1 tbsp cacao nibs
- 1 tbsp dark chocolate coated quinoa puffs
Instructions
- Beat whipping cream with your mixer
- Mix in 2.5 tbsp erythritol
- Mix in 1 tsp vanilla
- Mix in 2 tbsp coconut whipping cream
- Mix in 1 egg
- Mix in 2 drops peppermint essential oil (or extract)
- Mix in 1 ½ scoops DIESEL French Vanilla
- Mix until soft white peaks form
- Sprinkle dark chocolate quinoa puffs (Optional)
- Crush & sprinkle cacao nibs (Optional)
- Cut & sprinkle 100% dark chocolate (Optional)
- Transfer ice cream to a seal-able container and place in the freezer for about an hour. Remove and mix thoroughly, place back in the freezer for ~30 minutes and repeat until your desired consistency has been reached. If you leave it for too long, it will harden up. If it does, let it stand on the counter and warm up a bit and you're good to go.(Optional) To make it more decorative, you can hold back on some of the sprinkles and add them to the top after removing from the freezer when you are ready to serve.
